How to Bake Perfect Eggless Vanilla Cupcake
Vanilla flavor is the most likable flavor for any dessert. Whether it is cake or ice-cream or simply these super tasty Vanilla cupcake, the taste is irresistible. These Vanilla cupcake are super moist and fluffy in taste. The recipe is made using oil. The best thing about cupcakes is that you can always make them in advance in perfect quantity for any party. Just give more punch by decorating with any frosting of your choice.

Few things to remember for the ingredients:
- Maida/Refined flour
Make sure that the refined flour/maida is sifted(passed through the sieve) before use preferably with other dry ingredients as mentioned in the method. Sifting the flour is an important step especially for an eggless recipe to make it more lighter and our cupcakes will be more fluffy and soft in texture. Moreover, as mentioned above, always sift the flour with other dry ingredients so that all the ingredients are mixed properly.
- Baking powder
Baking powder is the rising agent for cakes and is the most important ingredient. So always check the expiry date of baking powder before use. Moreover if baking powder is not stored in an air tight container it will lose its properties. Check by adding a pinch of baking powder in half a cup of water, if bubbles are formed then you can use it.

- Oil
Most of the cakes are made using butter, ,mainly unsalted butter. But oil based cakes and cupcakes are also pretty much liked and are easy to make. Use any refined oil which means that it is light in color and has negligible amount of aroma because of which the cupcakes will preserve its taste.
Vanilla Essence
Use a good quality brand of essence as essence is the only which gives the cupcakes it flavor and so the name.
- Sugar & milk powder
My recipe uses milk powder along with sugar as a sweetener. Milk powder not only gives sweetness to the cupcakes but also adds a nice texture and flavor. This recipe mentions 1/2 cup of mixture of powdered sugar and milk powder so take it in equal proportion. Approximately it comes to 3 to 4 tbsp each.
Keeping these few things in mind let us start with our recipe to make Vanilla cupcakes
This recipe
- Makes 6 Vanilla cupcake
- Serves 3
Ingredients:
- Maida/Refine flour – 1 cup
- Powdered sugar & milk powder(equal proportion) – 1/2 cup
- Vanilla essence – 1 tsp
- Baking powder – 1 tsp
- Baking soda – 1/4 tsp
- Refined oil – 1/3 cup
- Milk – 1/2 cup
Method:
- Pre heat the oven at 200°C for 10 minutes.
- Sift maida/refined flour along with baking powder and baking soda. Keep it aside.
- In a bowl whisk together oil and sugar & milk powder mixture.
- Add milk and vanilla essence.
- After that add the dry ingredients. Mix gently.
- Mix gently to form a smooth batter. Don’t over mix.
- Bake in a cupcakes tin lined with paper cups at 170 °C for 15 to minutes.
- Remove the cupcakes from the tin and let them cool at room temperature.
- Enjoy it as it is or garnish by dipping it in melted chocolate.
