Use good quality maida/Refined flour. The flour should not be too old. To identify the quality of the flour, look for the colour, it should be white. The old flour flour will have a yellow shade, never use it.
For perfect soft & chewy cookies use cold butter. Cold butter is rub with the flour by hands, to get a fine crumb. The flour particles gets nice coating with the fat from the butter which makes the cookies soft & chewy from inside and crunchy layer from outside.
If you are baking the cookies in batches, always keep the remaining dough in refrigerator.
Add the milk in small quantity, one tbsp at a time.

Some tips to make perfect Upma
The most important step to make upma is to roast the sooji properly. If the sooji is not properly roasted, it will feel sticky while eating. You will be not able to chew the upma. Even while preparing Sooji ka Halwa, the taste entirely depends on how nicely the sooji is roasted in the ghee.
Moreover adding some flavorful ingredients to the upma makes the dish more tasty. One of the ingredient often added is urad or moong dal, this entirely changes the texture and flavour of upma.
The other and most important ingredient to add is ginger. Ginger enhances the taste of upma to a different level, try this step and believe me next time you will never make upma without adding ginger.
One more important ingredient which should not be missed out for more flavor is curry leaves. Curry leaves has its own aromatic flavour which makes any dish delicious. ]]>Shahi Paneer is a very popular Mughlai dish of Indian Cuisine. The dish is in the form of gravy, made from cashew and curd. Although the curry has a mild spicy taste, it contains some rich spices which gives the gravy a unique taste.
Cashew makes the gravy creamy and so tasteful that you will lick you finger till last bite. Shahi Paneer tastes best when served with tandoori roti or naan…just an awesome combination.
Many of you must have observed these difference in the recipes. It is mainly because of change in just one ingredient. But believe that hardly change the richness of this Dish. Use either one of the ingredient according to your taste. Other than cashew nuts the dish is often prepared either by using tomato or curd for the sourness of the gravy. And that’s where the color of the dish changes.
You must have seen in some recipe the color of the gravy is red in some white and that is because of tomato or curd. So both the ways the dish taste delicious. In my recipe I’m using curd which makes the gravy white complimenting paneer.
While making white gravy for Shahi Paneer its very important to maintain the white color of the gravy so accordingly the ingredients are to be roasted and cooked maintaining both its taste and color. But don’t worry the recipe is quite easy.

Use a good quality brand of essence as essence is the only which gives the cupcakes it flavor and so the name.
My recipe uses milk powder along with sugar as a sweetener. Milk powder not only gives sweetness to the cupcakes but also adds a nice texture and flavor. This recipe mentions 1/2 cup of mixture of powdered sugar and milk powder so take it in equal proportion. Approximately it comes to 3 to 4 tbsp each.

There are many dishes made from lauki/bottle gourd however the most popular are Lauki ka Halwa and Lauki Kofta. Even the sabji made with Lauki is delicious. A quick way to make Lauki ki sabji is, peel off the skin and wash it properly. Chop into small pieces. Chop garlic and green chillies.
Now in a pressure cooker heat oil and add jeera, chopped garlic and green chilli. Add turmeric and finally chopped Lauki. Mix all the ingredients and add salt. Now add just 1/2 cup of water and cook till one whistle and your sabji is ready to serve. Garnish with chopped fresh coriander. This is a very simple and tasty recipe you must try whenever you are in hurry.
