4 Simple Healthy Toast ideas

When it comes to breakfast, we most of the times ends up having toast or sandwiches. And why not to start the day with bread, along with healthy toppings or stuffings, which in itself is a wholesome food for carbohydrates. The only important thing is to choose healthy options like using whole wheat bread or multigrain bread with healthy toppings .i.e. lots of veggies. So keeping this in mind I tried these delicious and tasty 4 Simple Healthy toast ideas.

This recipe of 4 Simple Healthy toast ideas is really a good option for breakfast. The toppings are so delicious and tasty with different veggies. The common ingredient which I have used in every recipe is cottage cheese i.e. paneer. So now with cottage cheese this toast is going to be more healthy & tasty.

Making a toast or sandwich is very easy. The difference between them is the way it is made. Sandwich is prepared by stuffing the veggies between two slices of bread. Then it is served as it is or grilled.

For toast the bread is toasted first and then topped with veggies. The toast is again served as it is or it is grilled again, with cheese, till the cheese melts. Toast is more crunchy as the bread is nicely toasted and it is open so no moisture is trapped, because of which the bread becomes soft from inside.

Ingredients for Healthy toast ideas:  

Makes 4 Healthy toast

  • Bread slice – 4
  • Butter – 2 tbsp
  • Cottage cheese/ Paneer – 1  to 2 cups or 200 gms
  • Sliced tomato – 1
  • Sliced cucumber – 1/2
  • Lettuce leaves – 3 to 4
  • Grated beetroot – 1/4 cup
  • Grated carrot – 1/4 cup
  • Spices & dried herbs – any
  • Cheese spread/Mayonnaise – 1 to 2 tbsp
  • Grated Mozzarella/pizza cheese – 1/4 cup

Method :

  • First we will toast the bread with butter and keep it on wire mesh. Cooling the bread on wire mesh will keep the bread crispy and prevent it from becoming soft and soggy. 

  • First toast is a simple mix veggies and cottage cheese toast.

  • For the toast, in a bowl, take 1/4 cup of grated cottage cheese or paneer. Chop 1/2 tomato removing the seeds and pulp. Also finely chop some cucumber and lettuce leaves. If you don’t have lettuce leaves you can only use tomato and cucumber. 
  • Now add the chopped veggies to the grated cottage cheese. 
  • Add salt, red chilli powder or red chilli flakes and dried herbs of your choice.

  • Now mix all the ingredients properly.
  • On a toasted bread, spread some cheese spread or mayonnaise. Over this spread generous amount of the prepared topping. And our first healthy toast is ready to serve.

  • Serve with tomato sauce.
  • Second Toast we are going to make is somewhat with the same toppings but made with different way.

  • Inspite of the ingredients being the same, this toast tastes much different than the previous one.
  • Slice the cottage cheese and place it on the toast as shown in the image .

  • To add taste to the sliced cottage cheese, sprinkle some chilli flakes or chilli powder and mix dried herbs. Grill this slice for few minutes in oven or you can also grill it in a pan. As you can see in the image on grilling the cottage cheese it has become soft and the spices has also cooked nicely.
  • Immediately layer lettuce leaves, sliced tomato and sliced cucumber over the grilled cottage cheese.
  • Here our grilled cottage cheese and tomato cucumber toast is ready to serve.
  • Serve with tomato sauce or you can also spread some over the veggies. Enjoy the crunchy  healthy toast.
  • Next we will make cottage cheese and cheese toast.

  • This is my favourite toast because this toast is not only taste but very easy and made quickly.
  • For this toast we require only cottage cheese and mozzarella or pizza cheese with some spices.
  • First slice some cottage cheese.
  • In a pan take some butter or olive oil and toast this sliced cottage cheese for few minutes or till it becomes golden brown on both the sides. Now place these grilled cottage cheese slices on the toast. Add generous amount of grated mozzarella cheese or pizza cheese over the cottage cheese. Sprinkle some black pepper powder and chilli powder. Grill in oven or pan till the cheese melts.

  • Serve the toast with tomato sauce or mint chutney.
  • The last but not the least is cheesy beetroot and carrot toast.

  • Believe me beetroot and carrot tastes amazingly perfect with cottage cheese and mozzarella cheese. So try this toast atleast once, you are surely going to love it.
  • In a bowl take grated cottage cheese and Mozzarella cheese.
  • Add grated beetroot and carrot. Add some salt and black or white pepper powder. Also sprinkle some red chilli flakes. Mix all the ingredients thoroughly.
  • Spread cheese spread or mayonnaise over the toast and top this mixture over it. Grill in oven or in a pan till the cheese melts.

A few tips for making Chocolate chip cookies

Use good quality maida/Refined flour. The flour should not be too old. To identify the quality of the flour, look for the colour, it should be white. The old flour flour will have a yellow shade, never use it.

For perfect soft & chewy cookies use cold butter. Cold butter is rub with the flour by hands, to get a fine crumb. The flour particles gets nice coating with the fat from the butter which makes the cookies soft & chewy from inside and crunchy layer from outside.

If you are baking the cookies in batches, always keep the remaining dough in refrigerator.

Add the milk in small quantity, one tbsp at a time.

Chilli Garlic Bread

So let’s take a look to how to bake these chocolate chocolate chip cookies. 

Ingredients :

Makes 10 – 12 cookies

  • Refined flour/maida – 1 cup
  • Powdered sugar – 1/2 cup
  • Choco chips – 1/3 cup
  • Baking Powder – 1 tsp
  • Unsalted cold butter – 100 gms
  • Vanilla essense – 1 tsp
  • Milk – 2 to 3 tbsp
  • Salt – a pinch

Method:

  • Pre heat oven at 250 °C for 10 minutes.
  • Keep all the ingredients ready. Line the baking tray with parchment paper.

  • Sift refined flour/maida, baking powder and powdered sugar together.

  • Rub the butter and flour mixture with finger tips.

  • Now add vanilla essence and mix with hand.

  • Further add milk, 1 tbsp at a time. I have added 2 tbsp.

  • Add choco chips and mix it evenly in the dough.

 

  • Divide the dough into 10 to 12 equal parts and roughly roll into balls.
  • Place the dough ball on a baking tray and bake at 180 °C for 10 to 15 minutes.

  • If you are baking the cookies in batches, keep the remaining dough in refrigerator.
  • Place the cookies on wire rack and let them cool at room temperature.
  • Store the cookies in an air tight container.
  • Enjoy the chocolate chip cookies with hot milk.

How to make perfectly cooked Upma

Upma is a delicious, flavorful savory dish specially prepared for breakfast. It is a very popular dish in India just as Poha. It is an old recipe and often prepared in almost every kitchen.

Some tips to make perfect Upma

The most important step to make upma is to roast the sooji properly. If the sooji is not properly roasted, it will feel sticky while eating. You will be not able to chew the upma. Even while preparing Sooji ka Halwa, the taste entirely depends on how nicely the sooji is roasted in the ghee.

Moreover adding some flavorful ingredients to the upma makes the dish more tasty. One of the ingredient often added is urad or moong dal, this entirely changes the texture and flavour of upma.

The other and most important ingredient to add is ginger. Ginger enhances the taste of upma to a different level, try this step and believe me next time you will never make upma without adding ginger. 

One more important ingredient which should not be missed out for more flavor is curry leaves. Curry leaves has its own aromatic flavour which makes any dish delicious. So for making upma never miss out curry leaves. Always add hot boiling water while cooking upma. Hot water is easily soaked by sooji and it cooks properly.

Ingredients:

  • Sooji – 1 cup
  • Chopped onion – 1 medium
  • Grated ginger – 1 tsp
  • Cumin/jeera – 1 tsp
  • Chopped Green chilli – 4 to 5
  • Curry leaves – 5 to 6
  • Peas/peanuts – a fistful
  • Yellow split Moong dal – 2 tbsp
  • Salt – to taste
  • Oil – 2 tbsp
  • Chopped coriander – to garnish
  • Hot water – 2 cups

Method:

  • Wash and soak the moong dal in warm water for half-hour. Instead of moong dal you can also use urad dal.

 

 

  • Heat 1 tbsp of oil in a kadhai. Add sooji and roast it till light brown color. Keep the flame on low. This will take around 10 to 15 minutes.

 

Upma/Sooji upma

 

  • Remove the roasted sooji in a plate.
  • In the same kadhai heat the remaining oil.
  • Also on the other side keep 2 cups of water for boiling. Quantity of water depends on the quality and variety of sooji. If sooji is fine texture then less water will be required but if sooji is coarse then more water is used. So boil some extra water.
  • If you are using peanuts then add peanut to the oil and roast it for 1 minute on low flame.
  • Add cumin, green chilli, curry leaves, and soaked moong dal.
  • Sauté for 2 minutes.
  • Add chopped onion and cook till golden color.
  • Once the onion is cooked, add green peas (if using peas instead of a peanut) and mix.
  • Cook the green peas for few minutes, then add the roasted sooji and sauté for a minute.
  • Add the boiling water and cover with a lid immediately, as the water is hot, it will spatter out.
  • Lower the flame.
  • Season with salt as required and mix properly.
  • Add water as per the consistency you prefer. Some like the upma to be dry or some prefer it to be more moist.
  • After a minute remove the lid and mix properly.
  • Cook for 5 minutes.
  • Garnish with chopped coriander.
  • Serve hot with lime pickle.

How to make Broccoli Cheese sandwich

To make a more simplified recipe, use cheese slice instead of cheese spread, sprinkle some black pepper and dry herbs to make yummy cheese sandwich. 

Sandwich itself becomes a complete meal with lots of nutrition. I personally find sandwich a very easy & healthy food for breakfast which can be prepared quickly using lots of vegetables & bread of our choice.

There are varieties of bread available in the market. White bread, brown bread, multigrain bread etc. choose the one you like.

Simple and Grilled sandwich

There are so many recipes of sandwich. Plain sandwich, which is simply made by spreading cheese or butter over the bread with some vegetables like tomato & cucumber slices. So basically there is no cooking process. Thats so convenient.

Now if you want to add more taste then move a step ahead, make amazing grill sandwiches. Grilling gives a crunchy taste to the bread. The bread is grilled on a flat or grilled tawa/pan. You can also use a sandwich maker for it.

  • Chopped capsicum – ½ cup
  • Cheese spread – ½ cup
  • Grated processed/mozzarella cheese – 1 cup
  • Black pepper powder – to taste
  • Chilli flakes – to taste
  • Butter – to toast the bread
  • Oil – 1 to 2 tsp
  • Salt – to taste
  • Tomato sauce – 1 tbsp

Method:

  • Heat 1 tsp of oil in a pan.
  • Add grated broccoli and stir fry for 2 minutes.

 

  • Season with salt & pepper.
  • Remove in a plate and let it cool to room temperature.
  • In the similar way stir fry capsicum for 5 minutes. Capsicum adds a punch to the sandwich. Let it cool.

  • Mix both broccoli & capsicum and keep it aside.

How to make this Delicious Lasuni Methi/Fenugreek leaves recipe

This Lasuni Methi recipe is a creamy, spicy and delicious dish made from fresh methi saag/fenugreek leaves. The dish is so tasty that you will keep licking your fingers till the end. You will think it as an over description of this dish but believe me, its worth it. As the name says Lasuni, the dish has a punch of garlic taste with unique blend of other ingredients complimenting with methi. The recipe is very simple and the ingredients are also very common.

A vegetable can be cooked in so many ways creating many dishes from it. Take potato, for example, and you can name endless recipes like aloo paratha, aloo ki sabji, aloo tikki and many more delicious recipes. That’s is the magic of cooking. However one should always remember that while making a dish the taste of the vegetable should always dominate. Like methi in Lasuni methi recipe.

Some of the popular recipes made from methi are aloo methi, methi matar malai, dal methi, methi puri, methi ka paratha, methi mathri  and many more. One of the popular dishes from methi is Lasuni methi  recipe which I will be sharing with you all today.

 

Ingredients:

  • Fresh methi/fenugreek leaves – 1 bunch
  • Garlic cloves – 7 to 8
  • Chopped garlic – 1 1/2 tsp
  • Onion – 2 medium
  • Chopped tomato – 1
  • Red chilli powder – 1 tsp
  • Jeera/cumin – 1 tsp
  • Turmeric powder – 1/2 tsp
  • Garam masala powder – 1/2 tsp
  • Whole red chilli – 3 to 4
  • Oil – 3 tbsp
  • Salt – to taste

For the paste

  • Peanuts – 1 tbsp
  • Sesame seeds/til – 1 tbsp
  • Besan/chickpea flour – 1 tbsp

Directions for making Lasuni Methi/Fenugreek leaves recipe:

For making the paste

  • Dry roast peanuts, sesame seeds/til and besan/chickpea flour separately. Now this is an important step so don’t skip it. Roasting will enhance their taste and will make the dish more flavourful. For besan/chickpea flour it is very important to roast it as raw besan is more sticky and the dish will also get the raw taste of it. Remove the skin of the peanuts. Keep them aside to cool down. Then make a paste from these three ingredients by adding some water.

 

Lasuni Methi

 

Make Lasuni methi recipe

  • Wash the methi leaves with water and remove as much water as you can by keeping it on a kitchen towel.

  • Heat 1 to 2 tsp of oil in a kadai/pan.
  • Add jeera and whole garlic cloves. Cook it for few seconds.
  • To this add methi/fenugreek leaves.
  • Cook on high flame for 5 minutes. Season with salt and cook for 2 minutes. Keep it aside.

  • Keep all the ingredients ready and handy.

 

 

 

  • In another kadai/pan heat 2 to 3 tbsp of oil.
  • Add Chopped garlic and whole red chilli. Saute for few seconds and then add chopped onion.
  • Cook the onion till it turns pink or becomes translucent.

 

 

  • Now season it with red chilli powder, turmeric powder and garam masala powder. Mix all the ingredients properly.

 

 

  • Add chopped tomato and cook till soft.

 

 

  • Add the prepared paste and give it a mix.

 

 

  • Cook the paste till it leaves oil. Stir occasionally.

 

 

  • Finally add cooked methi and mix.

  • Add some hot water to get the required consistency. Adjust the salt.
  • Cook for another 2 minutes.
  • Give more taste by tempering with chopped garlic in oil.

You must have seen in some recipe the color of the gravy is red in some white and that is because of tomato or curd. So both the ways the dish taste delicious. In my recipe I’m using curd which makes the gravy white complimenting paneer. 

White gravy

While making white gravy for Shahi Paneer its very important to maintain the white color of the gravy so accordingly the ingredients are to be roasted and cooked maintaining both its taste and color. But don’t worry the recipe is quite easy. 

So let us see what all ingredients are required and the simple steps to make Shahi Paneer. 

This Shahi Paneer recipe

Serves – 3

Preparation time – 15 minutes

Cooking time – 30 minutes

Ingredients:

To make paste

  • Splited cashews – 12
  • Almond – 8
  • Green cardamom – 2 to 3
  • Cubed onion – 1 cup
  • Green chilli – 1

Other Ingredients

  • Paneer/cottage cheese – 200 gms
  • Ghee – 2 tbsp
  • Curd – 1/2 cup
  • Fresh cream – 4 tbsp
  • Freshly grounded black pepper – 1/4 tsp
  • Freshly powdered cinnamon powder – 1/4 tsp
  • Whole black cardamom – 1
  • Tej patta/Bay leaf – 1
  • Ginger garlic paste – 1 tsp

Directions:

  • In a pan heat 1/2 tsp of ghee. Roast cashew, green cardamom and almond till light pink color. Remove from pan and keep aside.

  • With little ghee fry cubed onion and green chilli till the onion turns light pink. Instead of frying onion can be boiled in water but it still taste raw so i fry the onion. Let the onion cool down. 

 

  • Make a smooth paste of onion, green chilli, cashews and almond.

  • In a kadhai/pan heat 2 tbsp of ghee.
  • Add ginger garlic and cook till pink color.
  • Then add whole spices tej patta/bay leaf, black cardamom.

  • After that add the paste and cook till the gravy releases ghee. To make the process fast add 1/2 tsp of salt while cooking the paste.
  • Now add black pepper powder and cinnamon powder.

  • Add curd and cook for 5 minutes.

  • Add 1/4 to 1/2 cup water and cook for another 5 minutes.
  • Season with salt according to taste.
  • Its time to add Cubed Paneer.

Shahi Paneer

Shahi Paneer Dhaba style

  • Cook for 5 minutes.
  • Just before serving add 4 tbsp of fresh cream. Make sure that the gravy is warm before adding the cream and don’t overcook Shahi Paneer after adding the cream.

  • Serve hot with Tandoori roti or Butter Naan.

How to Bake Perfect Eggless Vanilla Cupcake   

Vanilla flavor is the most likable flavor for any dessert. Whether it is cake or ice-cream or simply these super tasty Vanilla cupcake, the taste is irresistible. These Vanilla cupcake are super moist and fluffy in taste. The recipe is made using oil. The best thing about cupcakes is that you can always make them in advance in perfect quantity for any party. Just give more punch by decorating with any frosting of your choice.

Vanilla cupcake recipe

Few things to remember for the ingredients:

  • Maida/Refined flour

Make sure that the refined flour/maida is sifted(passed through the sieve) before use preferably with other dry ingredients as mentioned in the method. Sifting the flour is an important step especially for an eggless recipe to make it more lighter and our cupcakes will be more fluffy and soft in texture. Moreover, as mentioned above, always sift the flour with other dry ingredients so that all the ingredients are mixed properly.

  • Baking powder  

Baking powder is the rising agent for cakes and is the most important ingredient. So always check the expiry date of baking powder before use. Moreover if baking powder is not stored in an air tight container it will lose its properties. Check by adding a pinch of baking powder in half a cup of water, if bubbles are formed then you can use it.

  • Oil

Most of the cakes are made using butter, ,mainly unsalted butter. But oil based cakes and cupcakes are also pretty much liked and are easy to make. Use any refined oil which means that it is light in color and has negligible amount of aroma because of which the cupcakes will preserve its taste. 

  • Vanilla Essence

Use a good quality brand of essence as essence is the only which gives the cupcakes it flavor and so the name. 

  • Sugar & milk powder

My recipe uses milk powder along with sugar as a sweetener. Milk powder not only gives sweetness to the cupcakes but also adds a nice texture and flavor. This recipe mentions 1/2 cup of mixture of powdered sugar and milk powder so take it in equal proportion. Approximately it comes to 3 to 4 tbsp each.

Keeping these few things in mind let us start with our recipe to make Vanilla cupcakes

This recipe

  • Makes 6 Vanilla cupcake
  • Serves 3 

Ingredients:

  • Maida/Refine flour – 1 cup
  • Powdered sugar & milk powder(equal proportion) – 1/2 cup
  • Vanilla essence – 1 tsp
  • Baking powder – 1 tsp
  • Baking soda – 1/4 tsp
  • Refined oil – 1/3 cup
  • Milk – 1/2 cup

Method:

  • Pre heat the oven at 200°C for 10 minutes.
  • Sift maida/refined flour along with baking powder and baking soda. Keep it aside.
  • In a bowl whisk together oil and sugar & milk powder mixture. 
  • Add milk and vanilla essence.

  • After that add the dry ingredients. Mix gently.

  • Mix gently to form a smooth batter. Don’t over mix.

  • Bake in a cupcakes tin lined with paper cups at 170 °C for 15 to minutes.

How to make Lauki ka paratha

Bored cooking with the same menu of Dal, chawal, sabzi, roti….want to try something tasty & healthy. Or are you short of time for preparing lunch or dinner or you want to make a simple and tasty weekend Brunch then make this Lauki ka paratha.

There are many dishes made from lauki/bottle gourd however the most popular are Lauki ka Halwa and Lauki Kofta. Even the sabji made with Lauki is delicious. A quick way to make Lauki ki sabji is, peel off the skin and wash it properly. Chop into small pieces. Chop garlic and green chillies.

Now in a pressure cooker heat oil and add jeera, chopped garlic and green chilli. Add turmeric and finally chopped Lauki. Mix all the ingredients and add salt. Now add just 1/2 cup of water and cook till one whistle and your sabji is ready to serve. Garnish with chopped fresh coriander. This is a very simple and tasty recipe you must try whenever you are in hurry.  

Paratha is a common dish….prepared using stuffing made from aloo or gobi . But this recipe of Lauki ka paratha is different. Bottle gourd is a very healthy vegetable  which one should always include in our diet. So why to make only sabji from Lauki, try this amazing recipe of paratha. I’m sure children too will like it.

Before starting with the recipe just few things to remember to make the paratha more tasty

  • First important thing to remember is as we the grate the lauki/bottle gourd the color of the juice starts turning black with time. So before grating keep all the ingredients ready so that the ingredients can be added without wasting any time.
  • Keep the skin if lauki is fresh, this will not only add more fiber in the dish but also tastes good.
  • Don’t squeeze out the juice which is released after grating lauki. This juice has the taste and health too. Instead of water this juice is helpful for making the dough. And also no need to squeeze out the juice and keep separately just let it be with the vegetable and add the ingredients along with the flour to it. 

Ingredients:

  • Lauki – 1 medium
  • Chopped onion – 1
  • Ginger garlic paste(fresh) – 1 tsp
  • Cumin – 1 tsp
  • Red chilli powder – 2 tsp
  • Atta/whole wheat flour – 4 cup
  • Salt – to taste
  • Chopped Coriander leaves – ½ cup
  • Oil or ghee – to cook
  • Coriander powder – 2 tsp
  • Garam masala powder – 1 to 2 tsp

Method:

  • Grate the Lauki in a bowl. (keep the juice along with it)
  • Add all the ingredients except oil/ghee.
  • Mix properly and make a dough.
  • Avoid adding water till all the ingredients are mixed properly.
  • Once the ingredients are combined together and if the dough seems dry then add little water.
  • Knead into a tied dough because after sometime Lauki leaves water making the dough loose.
  • You can also use ready made mix atta instead of only whole wheat atta, to make it more healthy.
  • Mix atta can also be made at home by mixing 2 cup atta and the rest 2 cups can be a mixture of besan/jowar/bajra/ragi flour whichever is available. Only remember use half quantity of whole wheat atta for proper binding.
  • Now cover the dough for 10 mins.
  • Make paratha by simply rolling and cook with oil/ghee.
  • Serve with green chutney or enjoy with tomato sauce.

Vanilla Cake.

Eggs add moisture to the cake making it fluffier. It also gives structure and tenderness to the cake. So you must have observed the cakes containing eggs has a uniform rise and doesn’t break or crumble easily.

In eggless cake, egg is often substituted with banana, vinegar, curd and even buttermilk. All these ingredients add moisture to the cake making it soft and fluffy. While the other important ingredients like baking powder and baking soda helps in raising the cake.

Orange cake

Many a times during the baking process, cake rises nicely but goes down during the cooling process. This happens mainly because of incorrect measurements of the ingredients, too much beating or mixing of the batter after adding the flour containing baking powder & baking soda. So keeping this small things in mind one can easily bake an eggless cake. So here we start with our Recipe of Orange cake.

Ingredients for orange cake:

  • Refined flour/maida – 2 cups
  • Powdered sugar – 1 cup
  • Milk powder – 1 cup
  • Baking powder – 1 ½ tsp
  • Baking soda – ½ tsp
  • Milk – 1 to 2 cups
  • Orange zest – 2 oranges
  • Orange juice – ½ cup
  • Unsalted butter – 75 gm

Method:

  • Preheat the oven at 200° C for 10 minutes.
  • Grease the tin with butter or line with parchment paper
  • Beat the butter in a bowl till it becomes soft, for 5 minutes.
  • Add powdered sugar to the butter and beat it till light and glossy.

 

  • In another bowl mix all the dry ingredients i.e. refined flour, milk powder, baking powder and baking soda. Then sift the dry flour mixture once or twice.

 

  • Add this flour mixture to the butter & sugar mixture in portions and mix in folds.
  • Then add orange juice and orange zest.

  • Add milk as required. The batter should be of pouring consistency.
  • Pour the batter into the greased tin.

  • Bake at 170° C for 35 to 40 minutes.
  • Let the cake cool in the tin for 10 to 15 minutes.
  • Remove the cake from the tin and place it on a wire rack.
  • Let it cool completely.
