Eggless Red velvet cake using condensed milk

Ingredients:

  • Refined flour/Maida – 1 cup
  • White/unsalted Butter – 75 gm
  • Sugar – 1/2 cup
  • Milk powder – 1/2 cup
  • Cocoa powder – 3 tbsp
  • Baking powder – 1 tsp
  • Baking soda – a pinch
  • Milk – as required (approx. 1/2 to 1 cup)

Method:

  • Pre- heat the oven at 180º C for 10 minutes.
  • Soften the butter in a bowl.
  • Add sugar and beat till soft and fluffy. The butter and sugar mixture will become white and glossy. Using white/unsalted butter make a huge difference. The cake comes out so soft and tastes delicious. I have tried the same recipe using salted butter and oil. But nothing can beat white/unsalted butter.
  • In another bowl take refined flour/maida, milk powder, cocoa powder, baking powder and baking soda. Mix properly. Best mix with whisker with hand.
  • Now add dry flour mixture spoon by spoon to the butter and sugar mixture. Mix slowly.
  • Add sufficient milk to give required consistency.
  • Pour the batter into a pre- greased tin.
  • Bake at 180º C for 20 to 25 minutes.

    Can we make cheesy corn muffins without yeast….it looks yummy but I don’t use yeast… Any other option

      You can try with baking powder but will differ little bit in texture and taste. Yeast gives the texture and softness. Give a try. Make a small batch at first to avoid any wastage. Will be happy to hear your experience.
