Cheesy crispy potato pancake recipe is a delicious dish, which is creamy from inside & crispy from outside. The cheese & paneer (cottage cheese) goes well with potato making this pancake amazing. The potato is grated to give a nice crispy base filled with cheese & cottage cheese to make the dish creamy & feel fuller. A very few spices are used in this recipe to keep the original taste of potato, cheese & cottage cheese. While cooking, the cheese melts, binding together the crispy layer of potato & paneer (cottage cheese).

Potato, cheese & cottage cheese i.e. paneer are commonly used ingredients in day to day cooking. There are so many recipes which can be prepared just using these three ingredients. Also all are full of nutrients, so one or the other ingredient is always there in our meal.

Ingredients:
- Grated raw potatoes – 2 medium
- Mozzarella cheese – 1 cup
- Paneer(cottage cheese) – ½ cup
- Black pepper powder – to season
- Salt – to taste
- Tomato sauce – 1 tbsp

Method:
- Keep all the ingredients ready.
- Grate potato, mozzarella cheese and Paneer/cottage cheese.
- Wash the grated potato thrice or till the water comes out clear.
- Heat a pan & grease it with oil.
- Spread the grated potato such that there is no gap as shown below.
- For a perfect crisp, the layer of the potato should not be very thick. Also take care that there is no gap in between or else the cheese will melt and flow out through the gap.
- Season with salt & black pepper.
- Let the potato cook for 10 to 15 minutes.
- After 10 to 15 minutes a golden crust will be seen from the sides. That means the potato have become crispy.
- Now sprinkle grated cheese over the potato.
- Then comes the grated paneer (cottage cheese). Sprinkle the paneer over the cheese.
- Now to bind the paneer sprinkle some grated cheese.
- To add some more taste, add some tomato sauce.
- Finally layer with grated potato.
- Season the potato with black pepper powder.
- Let it cook for a minute so that the cheese melts binding all the ingredients.
- Do not cover with lid otherwise the potato will become soft & lose its crispiness.
- Gently & carefully flip the cake.
- Let it cook for 10 to 15 minutes so that the potato becomes crispy as the other layer & also the cheese will melt fully.
- Press gently with a flat spatula.
- After 15 minutes check that the pancake is nice crispy on both the sides, if the sides are golden color then our pancake is ready to serve.
- Garnish with chopped green spring onion & serve hot with tomato sauce.
