Cookies can be crunchy & crispy, it can be soft & chewy, all it depends on the method and the ingredients. These are the best chocolate chip cookies to try. Just with few ingredients these are ready to go with milk or tea or simply munch on it.  

Kids loves cookies and chocolate makes it more appealing. And why only kids we too love eating chocolate to have a mood boost. Choco chips melts in the flour giving a nice creamy, chocolaty taste with every bite. Chocolate chip cookies without eggs are equally delicious as egg cookies.

A few tips for making Chocolate chip cookies

Use good quality maida/Refined flour. The flour should not be too old. To identify the quality of the flour, look for the colour, it should be white. The old flour flour will have a yellow shade, never use it.

For perfect soft & chewy cookies use cold butter. Cold butter is rub with the flour by hands, to get a fine crumb. The flour particles gets nice coating with the fat from the butter which makes the cookies soft & chewy from inside and crunchy layer from outside.

If you are baking the cookies in batches, always keep the remaining dough in refrigerator.

Add the milk in small quantity, one tbsp at a time.

So let’s take a look to how to bake these chocolate chocolate chip cookies. 

Ingredients :

Makes 10 – 12 cookies

  • Refined flour/maida – 1 cup
  • Powdered sugar – 1/2 cup
  • Choco chips – 1/3 cup
  • Baking Powder – 1 tsp
  • Unsalted cold butter – 100 gms
  • Vanilla essense – 1 tsp
  • Milk – 2 to 3 tbsp
  • Salt – a pinch

Method:

  • Pre heat oven at 250 °C for 10 minutes.
  • Keep all the ingredients ready. Line the baking tray with parchment paper.

  • Sift refined flour/maida, baking powder and powdered sugar together.

  • Rub the butter and flour mixture with finger tips.

  • Now add vanilla essence and mix with hand.

  • Further add milk, 1 tbsp at a time. I have added 2 tbsp.

  • Add choco chips and mix it evenly in the dough.

 

  • Divide the dough into 10 to 12 equal parts and roughly roll into balls.
  • Place the dough ball on a baking tray and bake at 180 °C for 10 to 15 minutes.

  • If you are baking the cookies in batches, keep the remaining dough in refrigerator.
  • Place the cookies on wire rack and let them cool at room temperature.
  • Store the cookies in an air tight container.
  • Enjoy the chocolate chip cookies with hot milk.

How to Bake Perfect Eggless Vanilla Cupcake   

Vanilla flavor is the most likable flavor for any dessert. Whether it is cake or ice-cream or simply these super tasty Vanilla cupcake, the taste is irresistible. These Vanilla cupcake are super moist and fluffy in taste. The recipe is made using oil. The best thing about cupcakes is that you can always make them in advance in perfect quantity for any party. Just give more punch by decorating with any frosting of your choice.

Few things to remember for the ingredients:

  • Maida/Refined flour

Make sure that the refined flour/maida is sifted(passed through the sieve) before use preferably with other dry ingredients as mentioned in the method. Sifting the flour is an important step especially for an eggless recipe to make it more lighter and our cupcakes will be more fluffy and soft in texture. Moreover, as mentioned above, always sift the flour with other dry ingredients so that all the ingredients are mixed properly.

  • Baking powder  

Baking powder is the rising agent for cakes and is the most important ingredient. So always check the expiry date of baking powder before use. Moreover if baking powder is not stored in an air tight container it will lose its properties. Check by adding a pinch of baking powder in half a cup of water, if bubbles are formed then you can use it.

  • Oil

Most of the cakes are made using butter, ,mainly unsalted butter. But oil based cakes and cupcakes are also pretty much liked and are easy to make. Use any refined oil which means that it is light in color and has negligible amount of aroma because of which the cupcakes will preserve its taste. 

  • Vanilla Essence

Use a good quality brand of essence as essence is the only which gives the cupcakes it flavor and so the name. 

  • Sugar & milk powder

My recipe uses milk powder along with sugar as a sweetener. Milk powder not only gives sweetness to the cupcakes but also adds a nice texture and flavor. This recipe mentions 1/2 cup of mixture of powdered sugar and milk powder so take it in equal proportion. Approximately it comes to 3 to 4 tbsp each.

Keeping these few things in mind let us start with our recipe to make Vanilla cupcakes

This recipe

  • Makes 6 Vanilla cupcake
  • Serves 3 

Ingredients:

  • Maida/Refine flour – 1 cup
  • Powdered sugar & milk powder(equal proportion) – 1/2 cup
  • Vanilla essence – 1 tsp
  • Baking powder – 1 tsp
  • Baking soda – 1/4 tsp
  • Refined oil – 1/3 cup
  • Milk – 1/2 cup

Method:

  • Pre heat the oven at 200°C for 10 minutes.
  • Sift maida/refined flour along with baking powder and baking soda. Keep it aside.
  • In a bowl whisk together oil and sugar & milk powder mixture. 
  • Add milk and vanilla essence.

  • After that add the dry ingredients. Mix gently.

  • Mix gently to form a smooth batter. Don’t over mix.

  • Bake in a cupcakes tin lined with paper cups at 170 °C for 15 to minutes.

  • Remove the cupcakes from the tin and let them cool at room temperature.

Vanilla Cake.

Eggs add moisture to the cake making it fluffier. It also gives structure and tenderness to the cake. So you must have observed the cakes containing eggs has a uniform rise and doesn’t break or crumble easily.

In eggless cake, egg is often substituted with banana, vinegar, curd and even buttermilk. All these ingredients add moisture to the cake making it soft and fluffy. While the other important ingredients like baking powder and baking soda helps in raising the cake.

Orange cake

Many a times during the baking process, cake rises nicely but goes down during the cooling process. This happens mainly because of incorrect measurements of the ingredients, too much beating or mixing of the batter after adding the flour containing baking powder & baking soda. So keeping this small things in mind one can easily bake an eggless cake. So here we start with our Recipe of Orange cake.

Ingredients for orange cake:

  • Refined flour/maida – 2 cups
  • Powdered sugar – 1 cup
  • Milk powder – 1 cup
  • Baking powder – 1 ½ tsp
  • Baking soda – ½ tsp
  • Milk – 1 to 2 cups
  • Orange zest – 2 oranges
  • Orange juice – ½ cup
  • Unsalted butter – 75 gm

Method:

  • Preheat the oven at 200° C for 10 minutes.
  • Grease the tin with butter or line with parchment paper
  • Beat the butter in a bowl till it becomes soft, for 5 minutes.
  • Add powdered sugar to the butter and beat it till light and glossy.

 

  • In another bowl mix all the dry ingredients i.e. refined flour, milk powder, baking powder and baking soda. Then sift the dry flour mixture once or twice.

 

  • Add this flour mixture to the butter & sugar mixture in portions and mix in folds.
  • Then add orange juice and orange zest.

  • Add milk as required. The batter should be of pouring consistency.
  • Pour the batter into the greased tin.

  • Bake at 170° C for 35 to 40 minutes.
  • Let the cake cool in the tin for 10 to 15 minutes.
  • Remove the cake from the tin and place it on a wire rack.
  • Let it cool completely.

  • Milk – 1/2 cup

  • White chocolate – 50 gm
  • Whipped cream – 1/4 cup
  • Cinnamon powder – 1 tsp

Method:

  • Preheat oven at 200° C for 10 minutes.
  • Take maida/refined flour, powdered sugar, baking powder and baking soda in a bowl. Mix all.
  • Sift the mixed dry ingredients in another bowl.
  • Add cinnamon powder.

  • Add oil & milk to the dry ingredients.

  • Mix all the ingredients properly and gently to make a batter.

  • Add the batter to cupcake tin lined with paper cups.

  • Bake the cupcakes at 180° C for 15 to 20 minutes or till the toothpick comes out clean.
  • Take out the cupcakes from the tin and let it cool down to room temperature.

  • In the mean time we will prepare the ganache.
  • Now prepare a double boiler, add white chocolate in the bowl.
  • Stir continuously until the chocolate is almost melted.
  • Then remove the bowl from the double boiler.  
  • Add whipped cream to the melted chocolate and mix. 
  • Add cinnamon powder and mix.

  • Let the ganache cool down to room temperature.

  • Now its time to garnish the cupcakes.

 Cupcake

  • Simply dip the cupcake in the ganache.
  • Sprinkle some cinnamon powder over the ganache.

Donut recipe/ Easy way to make Eggless Donut at home

With this Donut recipe it is super easy to make donuts at home without adding egg. Donut is a sweet snack recipe prepared with a yeast base dough by frying. These soft fluffy donuts are slightly sweet in taste and are flavoured later with varieties of glaze. The most popular flavour is chocolate glazed donut. The donuts can also be simply sprinkled with powdered sugar, these egg free donut too tastes awesome.

Donuts are very simple to make at home taking care of very simple basic things mentioned below. This is the best homemade glazed donut recipe for anyone who wants to try making eggless donuts.

Things to remember before making Donut recipe

See that the yeast you use is active. Whenever you use a new pack of yeast check it by proofing. During this process the yeast eats on sugar and releases carbon dioxide making the liquid appears bubbly. This shows that the yeast is active and can be used for making the bread. (For proofing, in a bowl add 1/2 cup warm water. To this add 1 tsp of sugar and 1 tsp of dry active yeast. Give a stir. Cover and leave the mixture for 5 to 10 minutes. The mixture will become bubbly and form foam. This mixture is ready to use for making your bread.

The measurements should be correct especially for the flour and yeast. The water quantity mentioned in the recipe is perfect for this recipe but still to avoid any error remove 1 to 2 tbsp of water from the mentioned quantity and add it if required while kneading the dough. The consistency of the dough should not be too tight nor should it be too watery. It should be enough so that we can handle the dough.

Keep the dough for rising till it doubles in size. The time is always mentioned in the recipe but it always differs from place to place because of the weather of a particular place. Ideally a warm and damp place is suitable for the dough to rise quickly. So go according to the weather condition at your place, important thing to notice is that the dough should be double in size. Also don’t check the dough frequently.

So lets start with the recipe.

Ingredients:

For preparing the Dough

  • Maida/refined flour – 2 cups
  • Instant active dry yeast – 2 tsp
  • Warm milk – 1 cup
  • Sugar – 1 tsp
  • Butter – 2 tbsp
  • Salt – 1 tsp

For the glaze/ topping

  • Dark chocolate – 1 cup
  • Powdered sugar – ½ cup
  • Nutella – ½ cup
  • Choco chips – ½ cup

Directions:

  • In a bowl take maida/refined flour.
  • Add sugar, salt, active dry yeast, warm milk and melted butter.

  • Mix roughly with a wooden spatula.

  • When all the ingredients are combined together, take the dough on a flat surface dusted with flour.

  • Knead the dough for 10 to 15 minutes.

  • Place the dough in a bowl greased with some oil.

  • Cover the dough and keep it in a damp and warm place for 2 hours or till the dough rises to double its size.
  • After 2 hours take the dough on a flat surface and knead gently.
  • Divide the dough into two parts.
  • Roll the dough with 1 cm thickness.
  • Cut the dough with donut cutter.

  • Keep the remaining dough.
  • Make the remaining donuts in the same way.

  • After making all the donuts, keep them covered for another 1 hour.
  • The donuts will rise double its size.
  • Heat oil in a kadhai or pan.
  • Once the oil is hot, fry the donuts on medium flame till golden brown.

  • Let the donut cool down to room temperature.
  • For making chocolate donuts, melt the dark chocolate in microwave. Dip one side of the donut in the melted chocolate. Top with some Choco chips over the melted chocolate and let it cool down. Or sprinkle powdered sugar and spread melted chocolate over the donuts with a spoon.

  • For sweetened donuts sift powdered sugar with a sieve over the donuts.

I like baking cakes, cookies, biscuits bakery stuff at home. So I often try baking recipes which are easy to make with less time and ingredients that are always available at home, so that I can bake whenever I wish to…. This recipe of Namkeen Biscuits/Crackers is a tasty snack to enjoy with tea. It is salty biscuits/crackers, with flavor of jeera/cumin.

How to make Namkeen Biscuits/ Crackers

Ingredients:

  • Maida/refined flour – 2 cups
  • Butter(cold) – 50 gm
  • Baking powder – ½ tsp
  • Salt – ½ tsp
  • Cumin/jeera – 2 tsp
  • Water – as required

Method:

  • Preheat the oven at 200° C for 10 mins.
  • Take maida/refined flour in a bowl. Rub the cold butter with maida.
  • Add salt, cumin/jeera and baking powder.
  • Knead to dough using water.
  • Cover and keep it in refrigerator for 10 mins.
  • Knead again on a flat surface for 10 mins.
  • Roll into a thin sheet of ½ cm thickness.
  • Cut the sheet with cookie cutter of any shape you like.
  • Make holes on the biscuits with fork.
  • Place the biscuits on a baking tray.
  • Bake at 180° C for 10 to 15 mins or till light golden colour.
  • Let it cool down to room temperature on a wire mesh.
  • Store in air tight container.

How to Bake Ragi Biscuits

In India, ragi is widely used in many recipes, out of which Ragi papad is most popular. Whenever you feel lost of taste, eat roasted ragi papad. Ragi papads are made during summer which last throughout the year. It used to be fun, during the summer vacation, helping out mother for preparing the papads.

There are varieties of papads and other things which are still made during summer. 

Ragi/ finger is an excellent source of fiber , calcium, vitamin D and good carbs. Ragi flour has good amount of fiber that is why it is used for weight loss and in diabetic.

Making Ragi roti for weight management is a popular way to use ragi. Plain ragi roti is generally not very appealing so instead of using only ragi flour mix it with wheat flour for making more soft rotis. Ragi soup is given to the  toddlers for its nutritional valve.

So let us see how to use ragi flour for making biscuits.

Ingredients:

  • Ragi flour – 1 cup
  • Almond flour – 1/2cup
  • Almond milk -1/2 cup
  • Baking powder – 1 tsp
  • Powdered sugar – 1/2cup
  • Salt -1 tsp
  • Butter( unsalted) – 50 gm
  • Roasted Jeera/cumin – 1 tsp

Directions:

  • Pre heat the oven at 200°C for 10 minutes.
  • In a bowl whisk the butter to make it soft and light.

 

  • To the butter, add powdered sugar and whisk till soft and light.

 

 

  • Add ragi flour, almond flour, baking powder and salt.

 

 

  • Mix it properly.
  • Crush the roasted jeera/ cumin in between your palm. This will enhance the flavour of jeera. Add it to the mixture. Mix all.

 

 

  • Add almond milk as required to make a dough.

 

 

  • Divide the dough into small balls of equal size.
  • Grease a baking tray with butter or place a parchment paper.
  • Place the balls leaving some space between each other.
  • Flatten the balls with finger to give round shape. Now don’t miss this step. If the balls are not flatten, the biscuits. will be thick and remain soft from inside. To make the biscuits. more crunchy, reduce its thickness.

 

 

  • Bake the biscuits. at 180°C for 15 to 20 minutes.
  • Let the biscuits. cool down, on wire rack, to room temperature.

  • Store the Ragi Biscuits in an airtight container.

  • Refined flour – 1 cup
  • Milk powder – ½ cup
  • Powdered sugar – ½ cup
  • Ripe banana – 2 small
  • Baking powder – 1 tsp
  • White/unsalted butter – 50 gm
  • Vanilla essence – ½ tsp

Method:

  • Pre- heat oven at 250° C for 10 mins.
  • In a bowl soften the butter. Add powdered sugar and beat till white, glossy and soft.
  • In another bowl mix all the dry ingredients and mix properly.
  • Add the flour mixture spoon by spoon to the butter mixture. Mix properly.
  • The batter will be somewhat thick after all the flour is added.
  • Now in a bowl smash the bananas. Add this to the batter and mix. Bananas will give the required consistency to the batter. If still thick add little milk and mix.
  • Line the cupcake tray with paper cups.
  • Pour the batter into the paper cups to ¾ level, leaving space for the cupcake to rise.

  • Bake at 180° C for 20 to 25 mins.

How to bake yummy Apricot Cookies

Apricots, also called Khumani in India, is a variety of dry fruit mainly cultivated towards hilly areas. Fresh Apricots are sweet & juicy available only during the month July & august. Dried apricots are easily available in the market and comes in three types 

  • Sulphured dried, which are more orange in color. Sulphur treated apricots are more common type. In this process apricots are applied with sulphur before drying so it maintains the orange color of the fruit. These apricots are soft & easily chewable. Sulphur increases the shelf life but the original taste of the apricot is not maintained. 
  • Another type of dry apricot is sun dried and are dark in color. Sun dried apricots are hard in texture and taste good.  

This recipe of Apricot cookies contains sulphur dried apricot. The cookies can also be made using sun dried apricots but it has to be soaked in milk or water for 8 to hours before using. Also the cookies will differ in color and little bit taste wise.

Ingredients:

  • Dried Apricot – 6
  • Refined flour – 1 cup
  • Powdered sugar – ¼ cup
  • Milk – ½ cup
  • Butter – 50 gm
  • Baking powder – 1 tsp

Method:

  • Pre-heat the oven at 200° C for 10 minutes.
  • I have used whole pitted sulphur dried apricots for good color and taste. And it need not to be soaked in milk or water before use. 

 

Apricots

 

  • Grind 3 apricots with 2 tbsp of milk into a coarse paste.
  • In a bowl beat butter and sugar till soft, light and glossy.
  • In another bowl sift together refined flour and baking powder.
  • Add this flour to the butter and sugar mixture.
  • Mix properly.
  • Add the apricot and milk paste.
  • Mix to make a dough.
  • Add milk if required.
  • Chop 3 apricots. Add to the cookie dough and mix. The chunk of apricot with every bite of the cookie gives a good taste .

 

 

 

  • Place small portion of the dough on baking sheet.

 

 

  • Bake the cookies at 180° C for 15 to 20 minutes.

  • Let the cookies cool down on wire rack.
  • Store in a dry and air tight container.
