Apricot Cookies is a super tasty recipe of cookies with the richness of apricots. These cookies are chewy with the sweetness of apricot that will just melt in your mouth. Apricots gives nice color and taste to the cookies.

How to bake yummy Apricot Cookies

Apricots, also called Khumani in India, is a variety of dry fruit mainly cultivated towards hilly areas. Fresh Apricots are sweet & juicy available only during the month July & august. Dried apricots are easily available in the market and comes in three types 

  • Sulphured dried, which are more orange in color. Sulphur treated apricots are more common type. In this process apricots are applied with sulphur before drying so it maintains the orange color of the fruit. These apricots are soft & easily chewable. Sulphur increases the shelf life but the original taste of the apricot is not maintained. 
  • Another type of dry apricot is sun dried and are dark in color. Sun dried apricots are hard in texture and taste good.  

This recipe of Apricot cookies contains sulphur dried apricot. The cookies can also be made using sun dried apricots but it has to be soaked in milk or water for 8 to hours before using. Also the cookies will differ in color and little bit taste wise.

So lets begin with the recipe. 

Ingredients:

  • Dried Apricot – 6
  • Refined flour – 1 cup
  • Powdered sugar – ¼ cup
  • Milk – ½ cup
  • Butter – 50 gm
  • Baking powder – 1 tsp

Method:

  • Pre-heat the oven at 200° C for 10 minutes.
  • I have used whole pitted sulphur dried apricots for good color and taste. And it need not to be soaked in milk or water before use. 

 

Apricots

 

  • Grind 3 apricots with 2 tbsp of milk into a coarse paste.
  • In a bowl beat butter and sugar till soft, light and glossy.
  • In another bowl sift together refined flour and baking powder.
  • Add this flour to the butter and sugar mixture.
  • Mix properly.
  • Add the apricot and milk paste.
  • Mix to make a dough.
  • Add milk if required.
  • Chop 3 apricots. Add to the cookie dough and mix. The chunk of apricot with every bite of the cookie gives a good taste .

 

 

 

  • Place small portion of the dough on baking sheet.

 

 

  • Bake the cookies at 180° C for 15 to 20 minutes.

  • Let the cookies cool down on wire rack.
  • Store in a dry and air tight container.

    For your apricot cookies, how much in American weights is 50 grams and what is refined flour?

      You can take half stick of butter or 4 tbp. Refined flour is all purpose flour.
