Nuggets are children’s favorite yummy snacks. Nuggets are usually made using chicken or meat with seasoning, covered with breadcrumbs and deep fried. For the vegetarian recipe nuggets can be made using different vegetables with potato as the base. Today I’m going to share one such recipe of vegetarian nugget i.e. “Cheese Soya Nuggets recipe”. These Cheese Soya Nuggets recipe is the simplest & healthiest recipe of Nuggets.
How to make yummy and tasty cheese soya nuggets
The Nuggets are soft and cheesy from inside and crunchy from outside. It is the simple, healthy and yummiest recipe of veg nuggets.
Ingredients:
- Soya chunks – 2 cups
- Green chillies – 4 to 6
- Fresh Coriander leaves – ½ cup
- Cumin/jeera – 1 tsp
- Maida/refined flour – 4 to 6 tbsp + ½ cup
- Salt – to taste
- Chaat masala – 1 to 2 tsp
- Bread crumb – 1 cup
- Red chilli powder – 1 tsp
- Black pepper powder – 1 tsp
- Oil – to fry
- Mozzarella cheese – 200 gm

Things to remember while making Cheese Soya Nuggets recipe:
- Soak the soya chunk in warm water. The water should not be too hot otherwise the soya chunk will lose its structure and become too soft.
- Add more water while soaking the chunk as the soya chunk will absorb more water and swell. Less water will leave some soya chunk hard.
- Many a times to save time we boil the soya chunk. Avoid doing it because again the soya chunk will become too soft and the nuggets will be soggy in texture. It will also affect the taste of the nuggets.
- Some may not like the taste of soya chunk so to mask the taste add one small boiled potato.
- While shaping the nuggets you will sometimes see that the nuggets are breaking, for this shape the nuggets immediately with less pressure. Applying more pressure will take out the moisture from the nuggets and it will tend to break.
- Do not skip the step of coating the nuggets with maida/refined flour paste. This step will not only give a nice crunchy taste and texture to the nuggets but also keep the nuggets intact and avoid breaking.
- Add the spices and seasoning according to your taste.
- Fry the nuggets on medium flame so that the heat should reach till inside to melt the cheese.

Directions:
- Soak the soya chunks in warm water for half an hour.
- Squeeze out the extra water from the soya chunk. Remove as much as water from the chunk so that the nuggets will not become too soft.
- Grind the soya chunk along with coriander leaves, green chilli and cumin/jeera to a coarse paste.
- Take the paste in a bowl. Add salt and Chaat masala to the nugget base.
- Mix the paste properly so that all the ingredients are well incorporated in the soya chunk.
- Add maida/ refined flour to the paste one tbsp at a time and keep mixing. I have given the approximate quantity of refined flour/maida used. Add that much flour till the paste is able to bind into a nugget.
- Check after adding 4 tbsp of flour if the nuggets are able to shape and then only add more flour if required.
- Leave the mixture aside.
- In another bowl take ½ cup refined flour. Add salt, red chilli powder and black pepper powder to the flour.
- Mix the flour properly. Make a paste using water. There should not be any lumps.
- Shape the mixture into a ball and make a small cavity. Place a small chunk of mozzarella cheese and shape into a ball. Shape the ball into nuggets. In the same way make all the nuggets.
- Heat oil in a kadhai.
- With one hand dip the nugget into the refined flour/maida paste. Place the nugget onto the breadcrumb and coat it from all the sides. Dust gently the extra crumbs.
- Fry the nuggets on medium flame till golden brown.
- Serve hot with tomato sauce or mint chutney.
