Eggless Date/Khajur cake is a moist, rich and sugar-free recipe of cake. Yes I wrote it right, the cake is sugar-free, there is no added sugar. Still the cake is sweet and as delicious as the other cakes. The taste of the cake is very unique as the taste comes entirely from the dates. As the recipe names, Date cake, it is understood that the sweetness of the cake is added from the dates/khajur itself but how to use the dates so that the sweetness is uniformly distributed in the cake just like the sugar….let see the recipe.
How to make Eggless Date/Khajur cake(no added sugar)

Ingredients:
- Refined flour/Maida – 1 cups
- Unsalted butter – 50 gm
- Date/Khajur – 10 to 12 nos
- Baking powder – 1 tsp
- Baking soda – 1/2 tsp
- Milk – 1 to 2 cup

Method:
- Pre heat the oven at 200° C for 10 minutes.
- Grease the cake tin with butter and keep aside.
- Mix all the dry ingredients i.e. refined flour/maida, baking powder & baking soda.
- Sift the dry flour once or twice and keep it aside.
- Remove the seeds from the date & chop it roughly.
- Grind the date into a paste with 1 cup of milk. Add more milk if the paste is too thick. The paste should be of pouring consistency. There will be few chunks of date, let it be.
- Beat the butter till it becomes soft & light.
- Add the date paste to the butter and mix.
- Don’t worry the paste will not get mix & will be seen as separated from the butter.
- Add the flour mixture and mix. Now the batter will become homogenous.
- Pour the batter into a pre greased cake tin.
- Tap once or twice to remove any air bubble.
- Bake at 170° C for 30 to 35 minutes.
- After 35 minutes remove the cake from the oven and let it cool down for 15 minutes in the tin itself.
- Then remove the cake from the tin and let it cool completely on a wire rack.
